Apple Pie

Another recipe from my sister KristyAnn... I have made this for every winter holiday for the last few years and everyone loves it. It is very carmelly (is that a word?) and divine!

Apple Pie

For pie

Pastry for single-crust pie
1/2 cup sugar
3 tab flour
1 teaspoon cinnamon
1/8 teaspoon salt
6 cups thinly sliced and peeled apples (We like tart apples so we always use Granny Smith)

For topping

1 cup packed brown sugar
1/2 cup flour
1/2 cup quick oats
1/2 cup butter

Final topping

1/2 cup chopped pecans
1/4 cup caramel ice cream topping (let's be honest, I always do more than this!)

Mix sugar, flour, cinnamon, and salt
add apple slices and gently toss to coat
pour into pie crust
crumb topping - stir brown sugar, flour, and oats
cut in butter
sprinkle over pie
cover edges of pie crust with foil
Bake at 375 for 25 minutes
Remove foil and bake 25-30 min
Remove and sprinkle pecans and drizzle caramel

Caramel Apples

This is a new tradition for my family. These caramel apples turned out so perfect and it was so fun. Happy Halloween!!

2 cups brown sugar
1 cup corn syrup
1 cube butter

Boil these ingredients for about 1 minute while constantly stirring.
Then add:

1 can sweeten condensed milk

Continue stirring and bring mixture up to 245 degrees, then remove from heat.
Then add:

1 tsp vanilla

Let sit for about 5 minutes. Get your apples ready (I like Granny Smith) by putting Popsicle sticks in the tops. Also get your toppings ready (nuts, neath bar, sugar, cinnamon, chocolate). Dip and roll each apple in the caramel, then dip in desired toppings, then place apples on a cookie sheet covered with a generous amount of sugar (that way they won't stick). Let cool and enjoy!
