It is just so yummy! And it's pretty easy to throw together. Try it, I know you will love it!<br /><br /><span style="font-weight: bold;">Chicken Salad</span><br /><br />16 oz spiral pasta<br />1-2 chicken breasts cooked, cubed and completely cooled (I cheat here... I always use the canned chicken from costco. 1 can works great and it really tastes just fine)<br />bunch of red grapes<br />2-3 stalks green onion<br />1-2 green apples<br />2-3 stalks celery<br />1 can pineapple, drained<br />1 cup lighthouse coleslaw dressing (use only this brand... it's in the produce section)<br />1 cup mayo<br /><br />Cook pasta and put in fridge to cool completely. Chop everything up and put in large bowl. Dump in cooled pasta. Add coleslaw dressing and mayo. And it has bacon in it... how can you not love that!<br /><br />2 lbs Red Potatoes washed with skins on<br />2 cups mayo<br />6 eggs, hard boiled<br />2 stalks celery, sliced small<br />2-3 stalks green onions chopped<br />1 package of bacon, cooked and cooled<br />salt and pepper to taste<br /><br />Pierce potatoes and put them in a boiling pot of water. Boil until done (done but still firm so about 15-20 minutes... keep checking them). Once done, place in refrigerator until completely cooled. Hard boil eggs and place in refrigerator until completely cooled. Cook bacon, dice into small pieces and put in fridge until completely cool. <span class="plaincharacterwrap break">Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, green onion and celery. Add mayonnaise, salt and pepper to taste. She brought these into work and they were so addicting. They are super easy to make so you have to try them!<br /><br />Yummy bars<br /><br />1 cup karo syrup<br />1 cup sugar<br />1 1/2 cup peanut butter<br />6 cups rice crispies cereal<br />1 cup milk chocolate chips<br />1 cup buttersctoch chips<br /><br />In saucepan, heat and dissolve karo syrup and sugar. It usually takes me about 1 1/2 hours from start to finish when I grind my wheat)<br />1/2 cup gluten<br />2/3 cup brown sugar<br />1 Tablespoon salt<br />3 rounded Tablespoons of Saf - instant yeast (DO NOT use any other brand of yeast. SAF is incredible and once you use it, you will never look back. You can buy it online or at Macey's grocery store)<br />1/3 cup oil<br />4 cups hot tap water<br />3 eggs (optional but adds flavor - I always add them)<br /><br />Mix dry ingredients together. Add oil, water and eggs. Mix for 1 minute and check consistency. If dough is too dry, add more water. If dough is too moist, add more flour. (I test it by just touching the dough... if you are getting a ton of dough stuck to your fingers it is too moist. If when you touch it and the dough is not sticky at all, it is too dry. Your dough should be tacky.) Knead with dough hook for five minutes. (Do not add water or flour to the dough after it has finished mixing.) Spray counter and panes with Pam. Shape loaves and put in bread pans. Cover with dish towel and let rise for 25 minutes. Bake at 350 degrees for 25 minutes.<br /><br />**Side note - - You need a really good mixer to make bread, aka kitchenaid or bosch. You want to have a big crockpot to do this or you will need to half the recipe.<br /><br />Taco Soup<br /><br />2 pounds ground beef (we use ground turkey and it tastes great)<br />2 cups diced onions (I use the dehydrated onions from the LDS cannery)<br />2 (15 1/2 oz) cans pinto beans<br />1 (15 1/2 oz) can kidney beans<br />1 (15 1/4 oz) can whole kernel corn, drained<br />1 (14 1/2 oz) stewed tomatoes<br />2 (14 1/2 oz) diced tomatoes<br />2 (4 1/2 oz) cans diced green chiles<br />1 (4.6 oz) can black olives, drained and sliced<br />1 (1 1/4 oz) package taco soup seasoning mix<br />1 (1 oz) package ranch salad dressing mix<br /><br />Brown meat and nions in a large skillet, drain fat. Add all ingredients to a slow cooker and cook on low for 6-8 hours. These caramel apples turned out so perfect and it was so fun. Happy Halloween!!<br /><br />2 cups brown sugar<br />1 cup corn syrup<br />1 cube butter<br /><br />Boil these ingredients for about 1 minute while constantly stirring.<br />Then add:<br /><br />1 can sweeten condensed milk<br /><br />Continue stirring and bring mixture up to 245 degrees, then remove from heat.<br />Then add:<br /><br />1 tsp vanilla<br /><br />Let sit for about 5 minutes. Get your apples ready (I like Granny Smith) by putting Popsicle sticks in the tops. Also get your toppings ready (nuts, neath bar, sugar, cinnamon, chocolate). Dip and roll each apple in the caramel, then dip in desired toppings, then place apples on a cookie sheet covered with a generous amount of sugar (that way they won't stick). We made this for the BYU game the other day... so awesome! The best part about this, we had enough left over that I used it the next day to make killer quesadillas! Loved it!<br /><br /><br />2-3 tablespoons butter<br />2 cloves garlic (yeah, I used garlic from the jar... it's just so much easier to store and I can't tell the difference)<br />1/2 onion chopped fine (and yeah... This sounds so easy and tasty. I love Costco mango salsa. So excited!<br /><br />2 lbs chicken breasts (cubed)<br />1 onion (chopped)<br />1 Green Pepper (chopped)<br />1 – 2 T olive oil<br />½ bottle of Mango Salsa (Costco Size)<br />Shredded cheese<br /><br />Chop onion and green pepper into large pieces. Heat the olive oil in a large frying pan on medium heat. Sauté onions and peppers for 3-5 minutes (I like them still crunchy). Take out the onions and peppers, put in cubed chicken and cook until done. Add the peppers and onions back in, pour in salsa, stir and cook until heated through. Sprinkle shredded cheese on top, cover, and cook until cheese is melted. Serve over rice.<br /><br />Variations: You can grill the chicken (we used Montreal Chicken Seasoning), cut it into cubes, then add it to your peppers and onions. I'm so excited to try these because let's be honest... who doesn't like Costco chocolate muffins.<br /><br /><br />1 Devils food cake mix<br />1 (3.9 ounce) package instant chocolate pudding<br />3/4 cup vanilla yogurt (I have also used plain)<br />3/4 cup water<br />1/2 cup oil<br />3 eggs<br />2 cups chocolate chips<br /><br />Preheat oven to 400 degrees (maybe my oven is just too hot, but 400 was burning mine so just keep an eye on them, next time I will probably do them either rat 350 or 375). Lightly grease muffin pan (this makes about 20 muffins) or use muffin liners. Set aside. In a mixing bowl combine cake mix and pudding mix. In a separate bowl combine yogurt, water, oil, and eggs. Stir the wet ingredients into the dry ingredients just until combined. Stir in chocolate chips. Fill muffin tins about 3/4 full. Bake 20 -22 minutes or until center springs back. Cool on wire rack. These muffins will store for a couple of days, if you can avoid eating them that long.<br /><br />***UPDATE***<br /><br />So I (AmyLyn) made these on 8/13/09 and they are to die for. So yummy!! They are so easy to make so I probably won't be buying any at costco anytime soon. I was completely content watching Pride and Prejudice (for about the millionth time) and making these super yummy orange rolls.<br /><br /><span style="font-weight: bold;">Gooey Orange Rolls (make sure to half this)<br /><br /></span>2 c Hot water (from the tap)<br />3 c Orange Juice<br />1 c. sugar<br />1 T orange Zest<br />3 T yeast<br />2/3 c. oil<br />2 T salt<br />3 T lemon juice<br />10-12 c white flour (see why I said to half it... it makes a ton!)<br /><br />Place hot water, OJ (make sure this is hot/warm), sugar and yeast in a bowl. Mic and let stand for 5 minutes grow. Add oil, lemon juice, and salt. Slowly mix in flour 1 cup at a time (or 1/2 if you are 1/2'ing the recipe). Once flour is mixed in, knead with your dough hook for 4-5 minutes. Dough should be a little sticky (mine was REALLY sticky!!). This makes lighter, fluffier dough. Cover bowl and let rise to the top of bowl. Once dough rises to top, punch down and divide dough in half and roll out dough in large rectangle.<br /><br />Filling:<br />1 cude butter<br />1 pkg. vanilla instant pudding<br />1/2 c granulated sugar<br />3 T orange CONCENTRATE - not juice<br /><br />Melt the butter and OJ together and drizzle half of the micture on the rectangel dough and spread around (save other 1/2 for other rectangle of dough). Sprinkle 1/2 packet of pudding and 1/4 sugar (again saving the rest for the other rectangle). Roll up the dough into a long log, cut 1 inch sections, and place in grease cookie sheet. I absolutely love it but we have a ton and I'm always on the look out of ways to use it! I was so excited when I came across this recipe. I can't wait to try it!<br /><br />Cream Cheese Chicken<br />1 lb. of chicken (I prefer cut up but whole breasts or whatever are great too.)<br />1 pkg of italian seasoning dressing mix (found by the ranch packets)<br />1 8oz package of cream cheese<br />1/4 cup butter or margarine<br />1 container of sourcream<br /><br />Cook your chicken in the butter and seasoning and then once it is not pink anymore add everything else and cook for a couple hours on low.<br />Serve over rice or pasta. He is always asking me to make it. Try it out and let me know if you love it as much as we do!<br /><br />1 1/2 pounds ground beef (we've tried this with ground turkey and it tastes great!)<br />1 1/4 teaspoon salt<br />1 egg (you can use powdered eggs here, so much cheaper!)<br />1 dash ground black pepper<br />1 cup soft bread crumbs<br />1/2 cup milk<br />1/3 cup A-1 cause (you can use any steak sauce, this is just our favorite)<br />1 onion, chopped<br />1/2 cup diced green bell pepper<br /><br />Preheat oven to 350 degrees. Lightly grease bread loaf pan.<br /><br />In mixing bowl, combine the ground meat, slat, egg, black pepper, and bread crumbs. Pour in the milk, 3 tablespoons of steak sauce (you will use other to top the loaf), onion and green pepper.<br /><br />Place the mixture into the prepared loaf pan and shape into a loaf. Brush the top with the remaining steak sauce.<br /><br />Bake in ove for 1 hour or until done. Allow to sit for 5 minutes before serving.<br /><br />**This meal goes perfectly with a lettuce green salad and oven baked potatoes.
